Grilled Peach & Berry Salad

Ingredients
  

  • 2 whole peaches or nectarines pitted and halved
  • 2 Tbsp unsalted butter melted
  • 1/2 cup olive oil
  • 1/4 cup balsamic vinegar
  • 3 Tbsp honey or agave
  • salt/pepper to taste
  • 6 cups arugula
  • 1 cup fresh blueberries
  • 1/2 cup goat cheese crumbled
  • 1/2 cup pecans or marcona almonds

Instructions
 

  • Heat outdoor grill to medium-high or set indoor grill pan over medium-high heat.
  • Slice peaches into relatively thick slices. Brush both sides with melted butter and set on grill until soft and grill marks show – about 5 minutes per side. Set aside.
  • In small mixing bowl whisk together olive oil, balsamic, honey and salt and pepper to taste.
  • In large mixing bowl toss together arugula, blueberries, goat cheese, nuts and cooled peach slices.  Drizzle dressing over the top and serve immediately.
