Grilled Peach & Berry Salad
Ingredients
- 2 whole peaches or nectarines pitted and halved
- 2 Tbsp unsalted butter melted
- 1/2 cup olive oil
- 1/4 cup balsamic vinegar
- 3 Tbsp honey or agave
- salt/pepper to taste
- 6 cups arugula
- 1 cup fresh blueberries
- 1/2 cup goat cheese crumbled
- 1/2 cup pecans or marcona almonds
Instructions
- Heat outdoor grill to medium-high or set indoor grill pan over medium-high heat.
- Slice peaches into relatively thick slices. Brush both sides with melted butter and set on grill until soft and grill marks show – about 5 minutes per side. Set aside.
- In small mixing bowl whisk together olive oil, balsamic, honey and salt and pepper to taste.
- In large mixing bowl toss together arugula, blueberries, goat cheese, nuts and cooled peach slices. Drizzle dressing over the top and serve immediately.
